For more than 4 family generations the hand-process of this art has not changed here. We produced Mezcal the same way our previous generations have, Agave still grows organically on the skirts of mountains in Durango Mexico. Piñas (Agaves) get milled with axes by hand, get ready for fermantion then distilled twice in copper.
