For more than 4 family generations the hand-process of this art has not changed here. Maestro mezcalero, Gilberto Roldan produces Mezcal the same way as his father, grandfather and great-grand father did. Agave still grows organically on the skirts of mountains in Durango Mexico. Piñas (Agaves) get milled with axes and get ready for fermation.
